As soon as the weather warms up I dream of lighter foods—especially with citrus and fish. Fish tacos happen to be one of my favorite go-to meals and that is because you can constantly put a spin on the fish and make the salsa extra spunky by spicing it up or adding in island flavors.
Pan roasting salmon, so the skin gets nice and crispy, and then tossing it into the oven for a final few minutes, gives it the finish it needs to fall apart inside a taco. Fish should be buttery and flaky and topped with herbs that make your mouth water.
Chunky salsas add so much texture to a dish. This specific salsa had corn, tomatoes, avocados, pineapple, and the works (included in full recipe).
